COGNAC AS A PROTECTED ORIGIN – QUALITY WITH HERITAGE
Cognac can only be produced in legally defined areas of France, including:
Cognacais, Charente, Charente-Maritime.

The primary grape used in Cognac production is Ugni Blanc (also known as Trebbiano), which accounts for approximately 90% of all vineyards. Since 1930, the growing regions have been classified into six quality tiers (Crus):
Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, Bois,  Ordinaires

The final quality of any Cognac—and its barrel—is strongly influenced by the Cru from which it originates.

OAK CASK AGING DEFINES CHARACTER AND AGE
Cognac is created through assemblage, the art of blending eaux-de-vie of different ages and regions. Importantly, the age of a Cognac is measured solely by its time spent in oak barrels, as the maturation process stops once bottled.Common aging categories include:

I VS (Very Special) – minimum 2 years in oak
I VSOP (Very Superior Old Pale) – minimum 4 years
I XO (Extra Old) – minimum 10 years
I XXO (Extra Extra Old) – minimum 14 years
